Equipment

  • Large heavy bottomed saucepan
  • Wooden spoon or potato masher
  • Measuring cups and spoons

Ingredients

  • 1 pound lean ground beef 85/15 recommended
  • 1/2 cup yellow onion finely diced or grated
  • 1 can (8 oz) tomato sauce
  • 1/2 cup beef broth low sodium preferred
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce use gluten free if needed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Instructions

  • In a large heavy bottomed saucepan over medium high heat, cook the ground beef until fully browned, about 5 to 7 minutes, breaking it apart with a wooden spoon or potato masher to create a fine texture.
  • Stir in the diced onion and cook for an additional 3 to 4 minutes, until softened and translucent.
  • Carefully tilt the pan and spoon off any excess grease, leaving just enough to keep the mixture moist.
  • Add the chili powder, cumin, garlic powder, paprika, salt, and black pepper. Stir constantly for about 1 minute to toast the spices.
  • Pour in the tomato sauce, beef broth, mustard, Worcestershire sauce, and sugar, stirring until fully combined.
  • Reduce the heat to low and simmer uncovered for 20 to 25 minutes, stirring occasionally, until the sauce thickens slightly and reaches a smooth consistency.
  • Taste and adjust seasoning as needed, adding a splash more broth if the sauce becomes too thick.
  • Serve warm spooned generously over hot dogs in steamed buns with your favorite toppings.

Notes

For the most authentic texture, mash the beef thoroughly while cooking to achieve a fine, smooth consistency. Do not rush the simmering step, as it allows the flavors to meld properly. Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently on the stove or in the microwave, stirring occasionally.
