Ingredients
  

  • 2 cups all-purpose flour plus more if needed
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs room temperature
  • 2 tablespoons unsalted butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 4 cups vegetable oil for frying
  • 1/2 cup powdered sugar for dusting

Instructions
 

  • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  • In a separate bowl, whisk the eggs, melted butter, milk, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until a soft, slightly sticky dough forms. Do not overmix.
  • Cover the bowl with a kitchen towel and let the dough rest at room temperature for about 15 minutes.
  • Pour the vegetable oil into a deep, heavy bottomed pot to a depth of about 2 to 3 inches. Heat to 350°F (175°C), checking with a thermometer.
  • Using two spoons or a small cookie scoop dipped in water, drop walnut sized portions of dough into the hot oil in small batches of 4 to 5 pieces.
  • Fry for 2 to 3 minutes, turning occasionally, until golden brown on all sides and cooked through.
  • Remove with a slotted spoon and drain on a paper towel lined plate for about 1 minute.
  • While still warm, dust generously with powdered sugar and serve immediately.

Notes

For the lightest, fluffiest zeppole, do not overmix the dough and let it rest before frying. Maintain a steady oil temperature of 350°F to avoid greasy or undercooked centers. Best enjoyed fresh and warm, but leftovers can be stored in an airtight container at room temperature for up to 1 day or frozen for up to 1 month. Reheat in a 350°F oven for 5 to 7 minutes and dust with fresh powdered sugar before serving.
