Ingredients
  

For the Beef Marinade

  • 1.5 lbs beef sirloin or ribeye cut into 1.5-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar packed
  • 3 cloves garlic minced
  • 1.5 teaspoons chipotle chili powder adjust to taste
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 teaspoon salt

For the Skewers

  • 2 cups fresh pineapple cut into 1.5-inch chunks
  • 1 large red onion cut into 1.5-inch pieces
  • 1 large red bell pepper cut into 1.5-inch pieces
  • 1 large yellow bell pepper cut into 1.5-inch pieces
  • 1 tablespoon vegetable oil for oiling grill grates

For Serving

  • 2 tablespoons fresh cilantro chopped
  • 1 lime cut into wedges

Instructions
 

  • In a large bowl, whisk together the olive oil, soy sauce, brown sugar, minced garlic, chipotle chili powder, smoked paprika, black pepper, and salt until fully combined into a smooth marinade.
  • Pat the beef cubes dry with paper towels, then add them to the marinade. Toss well to coat every piece thoroughly. Cover the bowl and refrigerate for at least 20 minutes, or up to 4 hours for deeper flavor.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Metal skewers can be used directly.
  • Cut the fresh pineapple, red onion, and bell peppers into evenly sized 1.5-inch chunks. This ensures everything cooks at the same rate on the skewers.
  • Thread the skewers by alternating marinated beef cubes, pineapple chunks, red onion pieces, and bell pepper pieces. Aim for 4 to 5 beef pieces per skewer and leave a small gap between each item to allow even heat circulation.
  • Preheat your grill to medium-high heat, approximately 400 to 450 degrees F. Brush the grill grates lightly with vegetable oil to prevent sticking.
  • Place the assembled skewers on the hot grill. Cook for 3 to 4 minutes per side, turning once or twice, for a total grill time of 10 to 12 minutes. The beef should develop visible char marks and reach an internal temperature of 145 degrees F.
  • Remove the skewers from the grill and allow them to rest for 3 to 5 minutes before serving. This resting period allows the juices to redistribute throughout the meat.
  • Transfer the finished skewers to a serving platter. Garnish with freshly chopped cilantro and serve with lime wedges on the side. Enjoy immediately for the best flavor and texture.

Notes

For best results, marinate the beef for the full 4 hours when time allows. Always pat beef dry before marinating to help the coating adhere and promote a better sear. Do not overcrowd skewer pieces; small gaps between items encourage caramelization rather than steaming. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a splash of water or extra BBQ sauce to retain moisture. Cooked beef freezes well for up to 2 months; grilled pineapple is best enjoyed fresh.
