Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9x13 inch baking dish or line it with parchment paper.
  • Place each chicken breast between two sheets of plastic wrap and pound gently to an even thickness of about three quarters of an inch. This ensures even cooking throughout.
  • In a mixing bowl, combine the mayonnaise, grated parmesan cheese, garlic powder, seasoning salt, black pepper, and paprika if using. Stir until the mixture is smooth and fully blended.
  • Arrange the chicken breasts in the prepared baking dish. Spread the mayonnaise and parmesan mixture generously over the top of each breast, covering the surface fully with a thick, even layer.
  • Bake uncovered for 30 to 35 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the topping is golden and set. For extra browning, broil for the final 2 to 3 minutes.
  • Remove the dish from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat for maximum tenderness.

For best results, take the chicken out of the refrigerator 15 minutes before baking so it cooks more evenly. Do not skip the resting step after baking.
