Ingredients
  

  • 4 tablespoons all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder Dutch-process preferred
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 3 tablespoons whole milk room temperature; any non-dairy milk works
  • 2 tablespoons vegetable oil or melted butter
  • 1 large egg room temperature
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chocolate chips optional, for a molten center

Instructions
 

  • Lightly grease the inside of a 12 to 16 ounce microwave-safe mug with a small amount of butter or cooking spray to prevent sticking.
  • Add the flour, sugar, cocoa powder, baking powder, and salt directly into the mug. Stir with a fork until the dry ingredients are fully combined with no visible clumps.
  • Pour in the milk, vegetable oil, egg, and vanilla extract. Mix with a fork until a smooth, lump-free batter forms. Be sure to scrape the bottom of the mug where dry pockets tend to collect.
  • Fold in the chocolate chips if using. For a gooey molten center, push a small cluster of chips into the middle of the batter.
  • Microwave on high power for 60 to 90 seconds. Begin checking at 60 seconds. The cake is done when the top looks just set but the very center appears slightly moist. Do not overcook or the texture will become rubbery.
  • Allow the mug to rest for 30 to 60 seconds before eating. The cake continues to cook from residual heat and the texture settles into something wonderfully fluffy and moist during this time.
  • Top with vanilla ice cream, whipped cream, a drizzle of caramel, or a dusting of powdered sugar and enjoy directly from the mug while warm.

Notes

Microwave wattages vary. This recipe is calibrated for a 1000-watt microwave. Add 10 to 15 seconds for lower wattage models and start checking at 50 seconds for higher wattage models. Never fill the mug more than halfway to avoid overflow. Store any leftovers covered in the refrigerator for up to one day and reheat for 20 to 30 seconds. For a vegan version, substitute the egg with a flax egg and use oat milk and coconut oil.
