Ingredients
  

  • 4 oz blanco tequila 2 oz per serving
  • 1 cup frozen strawberries do not thaw
  • 3 oz fresh lime juice about 2 limes
  • 1 oz triple sec or sugar-free orange liqueur
  • 2 tablespoons powdered erythritol or monk fruit sweetener adjust to taste
  • 1 cup ice add more for thicker texture
  • 1 tablespoon coarse salt or Tajin for rimming glasses, optional
  • 2 fresh strawberry slices and lime wheels for garnish, optional

Instructions
 

  • Run a lime wedge around the rim of two margarita or rocks glasses. Dip the rims into a small plate of coarse salt or Tajin. Place the glasses in the freezer to chill while you prepare the drink.
  • Add the tequila, fresh lime juice, triple sec, powdered sweetener, frozen strawberries, and ice to a high-powered blender. Add liquids first to help the blades catch the frozen ingredients efficiently.
  • Blend on low for 5 seconds, then increase to high speed and blend for 30 to 45 seconds until completely smooth with no visible ice chunks. If the mixture is too thick to blend, add water one tablespoon at a time.
  • Taste the blended mixture and adjust sweetness with more powdered sweetener or brightness with an extra squeeze of lime. Blend for another 5 seconds to incorporate any additions.
  • Pour into the prepared chilled glasses. Garnish each with a fresh strawberry slice on the rim and a lime wheel. Serve immediately for the best frozen, slushy texture.

Notes

Always use powdered sweetener rather than granulated in cold blended drinks to avoid a gritty texture. Do not over-blend or the ice will melt and the drink will turn watery. Frozen strawberries are strongly preferred over fresh for achieving a thick slushy consistency. For a batch, blend all ingredients except ice and freeze in a zip-lock bag for up to one month. Break up the frozen mixture, add ice, and re-blend when ready to serve. To make a keto strawberry daiquiri variation, swap the tequila for white rum and omit the salt rim.
