Ingredients
  

For the Spiced Beef Filling

  • 1 lb ground beef (80/20 blend)
  • 1/2 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 1.5 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 2 tbsp beef broth or water to help spices bloom

For the Crispy Taco Shells

  • 8 small corn tortillas
  • 1 cup vegetable oil for frying

For the Creamy Lime Sauce

  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp fresh lime juice about 1 large lime
  • 1 tsp lime zest
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

For Serving

  • 1 cup shredded Mexican blend cheese
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato diced
  • 1/4 cup fresh cilantro roughly chopped
  • 1 lime lime wedges for serving

Instructions
 

  • Make the creamy lime sauce: Whisk together the sour cream, mayonnaise, fresh lime juice, lime zest, garlic powder, and salt in a small bowl until smooth. Taste and adjust lime or salt as needed. Cover and refrigerate until ready to use.
  • Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, for 5 to 7 minutes until no pink remains and the edges are lightly caramelized.
  • Season the filling: Carefully drain excess fat from the pan, then add the diced onion and minced garlic. Cook for 2 minutes until softened. Stir in the chili powder, smoked paprika, cumin, salt, and black pepper. Add the beef broth and stir well. Simmer for 2 minutes until the spices are fragrant and the mixture is cohesive.
  • Fry the tortilla shells: Pour about half an inch of vegetable oil into a clean skillet and heat over medium-high until it reaches approximately 350 degrees Fahrenheit. Using tongs, fold a corn tortilla in half and hold it partially submerged in the hot oil for 30 seconds to set the shape. Release and fry for 60 to 90 seconds per side until golden and crisp. Drain on a paper-towel-lined plate. Repeat with remaining tortillas.
  • Fill the tacos: While the shells are still hot, spoon the spiced beef filling into each one. Add a pinch of shredded cheese and let the residual heat melt it for about 30 seconds before adding any cold toppings.
  • Add toppings and sauce: Layer in the shredded lettuce, diced tomato, and fresh cilantro. Drizzle generously with the creamy lime sauce and serve immediately with lime wedges on the side for extra brightness.

Notes

For maximum crunch, fry the tortilla shells just before serving and do not fill them too far in advance. The beef filling can be made up to 4 days ahead and stored in the refrigerator, or frozen for up to 3 months. The creamy lime sauce keeps in the fridge for up to 5 days. Avoid overcrowding the oil when frying shells; work in batches of one or two at a time to maintain the oil temperature. For a lighter option, bake oiled tortillas folded over oven rack bars at 400 degrees Fahrenheit for 8 to 10 minutes instead of frying.
