Ingredients
  

  • 8 oz cream cheese softened to room temperature
  • 4 large flour tortillas burrito-size
  • 1/2 cup shredded cheddar cheese
  • 3 green onions thinly sliced
  • 2 tablespoons diced jalapeños jarred or fresh, patted dry
  • 1 tablespoon ranch seasoning mix
  • 1/4 cup diced red bell pepper patted dry
  • 1/2 teaspoon garlic powder

Instructions
 

  • Allow the cream cheese to sit at room temperature for at least 30 minutes until fully softened. This step is essential for a smooth, spreadable filling.
  • In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, green onions, diced jalapeños, diced red bell pepper, ranch seasoning mix, and garlic powder. Stir until everything is fully incorporated and the mixture is uniform.
  • Lay one large flour tortilla flat on a clean cutting board. Spread a generous, even layer of the cream cheese filling all the way to the edges of the tortilla, leaving no gaps.
  • Starting from one edge, roll the tortilla as tightly as possible into a log shape. The tighter the roll, the cleaner and more uniform your pinwheel slices will be. Repeat with the remaining tortillas and filling.
  • Wrap each roll individually in plastic wrap, twisting the ends to seal. Refrigerate for at least 1 hour, or up to 24 hours. The chill time firms up the filling and makes slicing much easier.
  • Remove the rolls from the refrigerator and unwrap them. Using a serrated knife, trim the ends off each roll, then cut into 1-inch rounds. Arrange on a serving platter and serve immediately, or return to the fridge until ready to serve.

Notes

For the cleanest slices, do not skip the chilling step. Cold filling holds its shape and prevents the pinwheels from squashing when cut. Always pat jarred jalapeños and fresh vegetables dry before adding them to the filling to prevent excess moisture from making the tortillas soggy. These rolls can be made up to 24 hours in advance and stored wrapped in the refrigerator. Freezing is not recommended as the cream cheese filling becomes watery upon thawing.
