Noodles

  • 8 oz dry soba noodles 100% buckwheat preferred

Peanut Sauce

  • 3 tablespoons creamy peanut butter natural, no added sugar
  • 3 tablespoons soy sauce low-sodium if preferred
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger grated
  • 2 cloves garlic minced
  • 2 tablespoons warm water to thin sauce as needed

Vegetables and Toppings

  • 1 cup red cabbage thinly shredded
  • 1 cup carrots shredded
  • 1 medium cucumber thinly sliced
  • 3 stalks green onions sliced
  • 2 tablespoons sesame seeds toasted
  • 1 pinch crushed red pepper flakes optional, for heat

Instructions
 

  • Bring a large pot of water to a boil. Add the soba noodles and cook according to package directions, typically 4 to 5 minutes. Stir occasionally to prevent clumping.
  • Drain the noodles in a colander and rinse immediately and thoroughly under cold running water, tossing with your hands or tongs as you go, until the noodles are completely cool and no longer sticky. This step is essential for proper cold soba texture.
  • In a large mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until completely smooth. Add warm water one tablespoon at a time if the sauce is too thick, whisking until it reaches a glossy, pourable consistency.
  • Add the cooled soba noodles to the bowl with the peanut sauce and toss well until every strand is evenly coated.
  • Fold in the shredded red cabbage, shredded carrots, sliced cucumber, and green onions. Toss gently to distribute the vegetables evenly throughout the salad.
  • Taste and adjust seasoning. Add a splash more rice vinegar for brightness, more soy sauce for saltiness, or a pinch of red pepper flakes for heat.
  • Divide into serving bowls and garnish with toasted sesame seeds and extra green onion slices. Serve immediately or refrigerate covered for up to 24 hours.

Notes

Always rinse soba noodles under cold water immediately after draining to stop cooking and remove excess starch. If making ahead, store the sauce and noodles separately and combine just before serving. Cucumbers release water over time, so add them fresh if prepping more than a few hours in advance. For a gluten-free version, use 100% buckwheat soba noodles and tamari in place of regular soy sauce.
