Ingredients
  

Oat Base

  • 2 cups old-fashioned rolled oats do not use instant oats
  • 2 cups milk whole milk or any plant-based alternative
  • 1 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons brown sugar packed, plus more to taste
  • 1.5 teaspoons ground cinnamon divided
  • 1 teaspoon vanilla extract

Streusel Topping

  • 4 tablespoons old-fashioned rolled oats
  • 4 tablespoons brown sugar packed
  • 2 tablespoons unsalted butter melted
  • 0.5 teaspoon ground cinnamon

Optional Toppings

  • 2 tablespoons mini chocolate chips optional
  • 2 tablespoons maple syrup for drizzling, optional

Instructions
 

  • In a large mixing bowl, combine the rolled oats, chia seeds, milk, Greek yogurt, vanilla extract, and 1 teaspoon of the cinnamon. Stir thoroughly until all ingredients are evenly incorporated.
  • Add the brown sugar and remaining 0.5 teaspoon of cinnamon over the top of the oat mixture. Use a spoon to gently swirl it in without fully mixing, leaving visible ribbons of cinnamon sugar for that classic coffee cake marbled effect.
  • Divide the oat mixture evenly among four mason jars or airtight containers. Seal each jar tightly with a lid and refrigerate for a minimum of 6 hours, or overnight for best results.
  • When ready to serve, make the streusel topping by combining the rolled oats, brown sugar, melted butter, and cinnamon in a small bowl. Stir until the mixture resembles coarse, damp crumbles.
  • Optional but recommended: toast the streusel in a dry skillet over medium heat for 2 to 3 minutes, stirring frequently, until golden and fragrant. Remove from heat and let cool for 1 minute before topping the oats.
  • Remove the oat jars from the refrigerator and give each one a good stir. If the oats are thicker than you like, add a splash of milk and stir to loosen. Top each jar generously with streusel crumble, and add mini chocolate chips or a drizzle of maple syrup if desired. Serve immediately.

Notes

Store oat jars without streusel topping in the refrigerator for up to 5 days. Always make and add the streusel fresh just before eating to keep it crunchy. The oat base can be frozen for up to 2 months in freezer-safe containers. Thaw overnight in the fridge before serving. For a dairy-free version, use oat milk, coconut yogurt, and coconut oil in place of the dairy ingredients. Do not use instant oats as they become too mushy after soaking.
