Ingredients
  

  • 1 pound pork sausage regular, hot, or maple-flavored
  • 1 can (10 oz) Rotel diced tomatoes and green chiles do not drain
  • 16 oz Velveeta cheese cut into 1-inch cubes
  • 4 oz cream cheese softened and cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh cilantro or sliced green onions optional, for garnish

Instructions
 

  • Place a large skillet over medium-high heat. Add the pork sausage and break it apart with a wooden spoon as it cooks. Cook for 7 to 9 minutes until no pink remains and the edges are lightly browned. Drain off most of the excess fat, leaving a small amount in the pan for flavor.
  • Reduce the burner to medium-low heat. Add the cubed cream cheese directly to the sausage in the skillet. Stir frequently for about 2 minutes until the cream cheese is mostly melted and incorporated into the sausage.
  • Add the cubed Velveeta and the entire can of Rotel tomatoes and green chiles, including the liquid. Stir everything together gently to combine.
  • Continue stirring over medium-low heat for 4 to 6 minutes until the Velveeta is fully melted and the dip is smooth and creamy throughout. Stir in the garlic powder and onion powder.
  • Taste the dip and adjust seasoning if needed, adding a pinch of salt, extra garlic powder, or a dash of hot sauce to suit your preference. Garnish with fresh cilantro or sliced green onions if desired. Serve immediately with tortilla chips, or transfer to a slow cooker set to WARM to keep the dip perfectly melted throughout your event.

Notes

For best results, cut Velveeta into small 1-inch cubes before adding to the pan so it melts faster and more evenly. Do not drain the Rotel can; that liquid is essential for the right consistency and flavor. Avoid cooking over high heat once the cheese is added, as this can cause a grainy texture. Leftovers keep in the refrigerator for up to 4 days and reheat well on the stovetop with a splash of milk to restore creaminess.
